  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 3 tbsp Korean chili paste (gochujang)
  • 1 tsp garlic powder
  • 4 brioche or potato sandwich buns
  • 1 cup fresh lettuce, shredded
  • 1 cup cucumber slices
  • ½ cup pickles
  • ½ cup mayonnaise
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey

Instructions

  1. Marinate chicken in buttermilk for at least 1 hour for tenderness.
  2. In a bowl, mix flour, garlic powder, salt, and pepper. Dredge marinated chicken in the mixture until fully coated.
  3. Heat vegetable oil in a skillet to 350°F (175°C). Fry coated chicken pieces for about 5-7 minutes per side until golden brown.
  4. While frying, combine mayonnaise, gochujang, honey, and soy sauce for the sauce; adjust to taste.
  5. Spread the sauce on both sides of the buns. Layer with fried chicken, lettuce, cucumber slices, and pickles before closing.
