  • 1 cup canned black beans, rinsed and drained
  • 1 cup bell peppers (mixed colors), diced
  • ½ cup red onion, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, sliced (optional)
  • 2 tsp olive oil

Instructions

  2. Sauté vegetables: In a non-stick skillet over medium heat, add olive oil and sauté onions and peppers until softened.
