  • 4 fresh salmon fillets (6 oz each)
  • 1 cup frozen peas
  • 1 cup fresh basil leaves
  • 3 garlic cloves
  • 2 tbsp lemon juice (freshly squeezed)
  • 1/3 cup extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by rinsing the salmon fillets under cold water and patting them dry.
  2. In a food processor, blend frozen peas, basil leaves, garlic cloves, lemon juice, Parmesan cheese, salt, and pepper until smooth. Gradually add olive oil while blending.
  3. Heat olive oil in a skillet over medium-high heat. Place salmon fillets skin-side down and sear for approximately 4 minutes until crispy.
  4. Flip the fillets carefully with a spatula and cook for an additional 4-5 minutes until they flake easily but remain juicy inside.
  5. Plate the salmon and generously spoon pea pesto over each fillet. Garnish with extra basil if desired.
