- 1 cup plain full-fat yogurt
- 3 tablespoons garlic and ginger paste
- 2 tablespoons tikka masala spice blend
- 1 can (14 oz) crushed tomatoes
- 1 cup coconut milk or heavy cream
- Fresh cilantro for garnish
Instructions
- Marinate the chicken: In a bowl, combine yogurt, garlic and ginger paste, and tikka masala spices. Add chicken and coat well. Cover and refrigerate for at least 1 hour.
- Cook the chicken: Preheat grill or skillet over medium-high heat. Grill marinated chicken for 6-8 minutes per side until fully cooked (165°F internal temperature). Remove from heat and chop into bite-sized pieces.
- Prepare the sauce: In a large pan, sauté chopped onions over medium heat until translucent. Add crushed tomatoes and simmer for 5 minutes. Stir in coconut milk or heavy cream.
- Combine everything: Add the chopped chicken to the sauce, stirring well. Simmer for an additional 5 minutes to meld flavors.
- Garnish and serve hot with fresh cilantro on top.
