- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 1 cup chopped pecans
- 16 oz cream cheese, softened
- 1 cup sour cream
- 2 tsp vanilla extract
- 3 large eggs
Instructions
- Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar. Press firmly into the bottom of a springform pan.
- Toast chopped pecans on a baking sheet for 8-10 minutes until golden brown.
- In another bowl, beat cream cheese, sour cream, remaining sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
- Pour half the filling over the crust, sprinkle half the toasted pecans on top. Add the remaining filling and top with the rest of the pecans.
- Bake for 60-70 minutes until set but slightly wobbly in the center; cool in the oven for an hour to prevent cracks.
- Chill in the refrigerator for at least four hours before serving.
