  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 cup chopped pecans
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar. Press firmly into the bottom of a springform pan.
  2. Toast chopped pecans on a baking sheet for 8-10 minutes until golden brown.
  3. In another bowl, beat cream cheese, sour cream, remaining sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Pour half the filling over the crust, sprinkle half the toasted pecans on top. Add the remaining filling and top with the rest of the pecans.
  5. Bake for 60-70 minutes until set but slightly wobbly in the center; cool in the oven for an hour to prevent cracks.
  6. Chill in the refrigerator for at least four hours before serving.
