  • 8 oz spaghetti or fettuccine
  • 1 medium head cauliflower (about 1 lb), chopped into florets
  • 4 oz bacon or pancetta, chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream (or half-and-half)
  • 2 large eggs
  • Freshly cracked black pepper, to taste
  • Salt, to taste

Instructions

  1. Cook the pasta according to package instructions until al dente; reserve some pasta water before draining.
  2. In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside.
  3. Steam cauliflower florets in boiling water until fork-tender (about 5-7 minutes).
  4. Blend steamed cauliflower with cream, eggs, Parmesan cheese, garlic, salt, and pepper until smooth.
  5. Combine drained pasta with the bacon in the skillet and mix in the cauliflower sauce. Adjust creaminess with reserved pasta water as needed.
  6. Serve hot, garnished with extra Parmesan and black pepper.
