  • 3 cloves fresh garlic, minced
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup heavy cream (240ml)
  • 1 cup low-sodium chicken broth (240ml)
  • 2 tbsp olive oil (30ml)
  • 1 tsp fresh thyme or parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp low-sodium soy sauce (30ml)
  • 1 tbsp lemon juice (15ml)

Instructions

  1. Preheat a large skillet over medium-high heat and add olive oil until shimmering.
  2. Season chicken breasts with salt and pepper, then sear for 5-7 minutes on each side until golden brown. Transfer to a plate to rest.
  3. In the same skillet, sauté minced garlic until fragrant for about 30 seconds. Add corn and cook until lightly golden.
  4. Pour in chicken broth and heavy cream; stir well while scraping any browned bits from the pan. Simmer for about 5 minutes until slightly thickened.
  5. Return the chicken to the skillet and let it cook in the sauce for another 5-10 minutes until fully cooked through.
  6. Garnish with fresh herbs before serving, ideally paired with rice or crusty bread.
