  • 4 medium russet potatoes (about 2 lbs), peeled and diced
  • 3 leeks, cleaned and sliced
  • 2 tbsp unsalted butter
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by peeling and dicing the potatoes and slicing the leeks.
