  • 1 cup green lentils, rinsed
  • 1 medium zucchini, chopped
  • 2 medium carrots, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fresh spinach
  • 4 cups low-sodium vegetable broth
  • 3 garlic cloves, minced
  • 1 medium yellow onion, diced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until translucent (about 5 minutes).
  2. Add carrots and zucchini; cook for an additional 3 minutes.
  3. Stir in lentils, canned tomatoes, and vegetable broth. Bring to a gentle boil.
  4. Season with oregano, thyme, basil, salt, and pepper. Simmer for 25–30 minutes until lentils are tender.
  5. Stir in fresh spinach during the last 5 minutes of cooking until wilted.
  6. Serve hot with a drizzle of olive oil and crusty bread on the side.
