  • 8 oz short pasta (such as fusilli or penne)
  • 1 cup cooked ham, diced
  • 1 cup fresh peas (or frozen)
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh herbs (parsley, dill, or chives), chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and cool slightly.
  2. Rinse the peas under cold water if using frozen ones. Halve cherry tomatoes.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. In a large mixing bowl, combine cooked pasta, diced ham, peas, cherry tomatoes, fresh herbs, and dressing. Toss well.
  5. Cover and chill for at least 30 minutes before serving to enhance flavors.
