  • 2 large eggs

  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Grate the zucchini and squeeze out excess moisture using a clean towel.
  3. In a large bowl, whisk together eggs, sugar, oil, vanilla extract, and lemon juice until combined.
  4. In another bowl, mix flour and baking powder. Gradually add this dry mixture to the wet ingredients until just combined.
  5. Fold in the grated zucchini and lemon zest evenly into the batter.
  6. Pour the batter into the prepared loaf pan and bake for about 50-60 minutes or until a toothpick inserted comes out clean.
