Ingredients

- 1 cup quinoa
- 3–4 cloves fresh garlic, minced
- Juice of 1 lemon (about 3 tbsp)
- 1/4 cup extra-virgin olive oil
- 2 cups water
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse quinoa under cold water until clear. In a pot, combine quinoa and water; bring to boil.
- Reduce heat to low; cover and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
