  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 8 oz pasta (spaghetti or fettuccine)
  • 2 fresh lemons (zested and juiced)
  • 2 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup fresh herbs (parsley or basil), chopped
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and sauté minced garlic until fragrant.
  2. Add chicken breasts to the skillet, sear for about 5 minutes on each side until golden brown. Remove from heat to rest.
  3. In the same skillet, add lemon juice and reserved pasta water, scraping browned bits to enhance flavor.
  4. Cook pasta according to package instructions until al dente; drain while reserving some pasta water.
  5. Toss the cooked pasta with the lemon sauce in the skillet. Slice rested chicken and mix it in.
  6. Serve warm with freshly grated Parmesan and chopped herbs on top.
