  • 1 cup green or brown lentils
  • 3 medium carrots, chopped
  • 1/2 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss chopped carrots in a bowl with olive oil, salt, pepper, and minced garlic until coated.
  3. Spread carrots on a baking sheet and roast for 25-30 minutes until golden brown.
  4. Rinse lentils under cold water. In a saucepan, combine lentils with 3 cups of water. Boil over medium heat.
  5. Reduce heat to low and simmer lentils for 20-25 minutes until tender; season with salt.
  6. Assemble bowls: Start with lentils, top with roasted carrots and crumbled feta, finishing with fresh herbs.
