Ingredients

  • 2 cups fresh spinach
  • 1 cup diced tomatoes (canned or fresh)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 large eggs
  • 1 tsp ground cumin
  • 2 tbsp extra virgin olive oil
  • ½ cup crumbled feta cheese (optional)
  • Fresh parsley and cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
  2. Add minced garlic and ground cumin; stir for 1 minute until fragrant.
  3. Incorporate diced tomatoes; cook until bubbling. Add spinach and stir until wilted (2-3 minutes).
  4. Create small wells in the mixture and crack an egg into each well.
  5. Cover the skillet and simmer for 6-8 minutes until egg whites are firm but yolks remain runny.
  6. Remove from heat, sprinkle with feta cheese if desired, and serve immediately with crusty bread.
