  • 34 boneless, skinless chicken breasts (1 lb)
  • 3 cloves fresh garlic, minced
  • 1 medium sweet onion, finely chopped
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 4 cups low-sodium chicken broth
  • 2 cups thick tortilla chips
  • 1 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Chop the onion, mince the garlic, and gather spices.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent. Add garlic and cook until fragrant.
  3. Add chicken breasts to the pot and sear until golden brown on both sides (about 5 minutes per side).
  4. Pour in diced tomatoes with their juices and chicken broth. Stir well.
  5. Season with cumin, chili powder, salt, and pepper. Simmer for about 20 minutes until chicken is cooked through.
  6. Remove chicken from the pot, shred using two forks, then return it to the soup along with lime juice and cilantro.
  7. Serve hot topped with crispy tortilla chips.
