  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla strips for garnish

Instructions

  1. Dice the onion and bell peppers; mince the garlic.
  2. In a large pot over medium heat, sauté onions and garlic in olive oil until fragrant (about 2 minutes). Add bell peppers and cook for another 3 minutes until softened.
  3. Add chicken breasts, diced tomatoes, and chicken broth; stir gently.
  4. Season with chili powder, cumin, salt, and pepper. Bring to a simmer and cover for about 20 minutes.
  5. Remove chicken, shred it using two forks, then return it to the pot along with heavy cream.
  6. Serve hot topped with tortilla strips or your choice of garnishes.
