  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1.5 cups shredded cheddar and Monterey Jack cheese blend
  • 1/2 cup cooked bacon bits
  • 2 green onions, chopped

Instructions

  1. Prepare the ingredients: Dice the russet potatoes and chop the onion.
  2. In a large pot, melt 2 tablespoons of butter over medium heat. Sauté the onion until translucent, about 5 minutes. Add minced garlic and cook for another minute.
