Description

Refreshing Tzatziki Chicken Salad is a light, vibrant dish that combines tender chicken with creamy yogurt and crisp cucumbers. Perfect for summer cookouts or quick, healthy lunches.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 large Persian cucumber, diced
  • 1 cup plain Greek yogurt (full-fat)
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh mint
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or stovetop pan over medium-high heat. Season chicken breasts with salt and pepper.
  2. Grill the chicken until it reaches an internal temperature of 165°F (75°C), about 6-7 minutes per side. Allow to cool slightly before shredding into bite-sized pieces.
  3. In a bowl, whisk together Greek yogurt, minced garlic, lemon juice, dill, mint, salt, and pepper until smooth.
  4. Add the shredded chicken and diced cucumber to the bowl. Mix gently until everything is coated in the tzatziki dressing.
  5. Serve in a bowl or individual plates, drizzled with olive oil and garnished with additional herbs if desired.
