  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 2 cups fresh ripe mangoes, pureed
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan and bake for 10 minutes until golden.
  2. Beat cream cheese in an electric mixer until smooth. Gradually add sugar and mix until fluffy.
  3. Incorporate sour cream and lemon juice until fully combined.
  4. Puree mangoes until smooth, then gently fold into the cream cheese mixture.
  5. Pour filling over the cooled crust and smooth the top with a spatula.
  6. Bake for one hour or until slightly jiggly in the center. Cool in the oven with the door ajar to prevent cracking. Refrigerate for at least four hours before serving.
