- 8 corn tortillas
- 2 cups Tex-Mex cheese blend (cheddar and Monterey Jack)
- 1 can (4 oz) canned green chiles
- 1 medium yellow onion, chopped
- 2 cups enchilada sauce
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
- Add chopped onions to the skillet and sauté until translucent, about 5 minutes.
- Stir in canned green chiles and taco seasoning; simmer for another 5 minutes.
- Warm corn tortillas in a separate skillet until pliable.
- Spoon beef mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
- Pour enchilada sauce over the rolled tortillas and sprinkle with cheese.
- Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes or until bubbly.
