Description

Tex-Mex Beef Enchiladas are a delightful dish featuring savory ground beef, melty cheese, and zesty enchilada sauce wrapped in warm corn tortillas—perfect for family dinners or gatherings.


Ingredients

  • 1 lb lean ground beef
  • 8 corn tortillas
  • 2 cups Tex-Mex cheese blend (cheddar and Monterey Jack)
  • 1 can (4 oz) canned green chiles
  • 1 medium yellow onion, chopped
  • 2 cups enchilada sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Add chopped onions to the skillet and sauté until translucent, about 5 minutes.
  4. Stir in canned green chiles and taco seasoning; simmer for another 5 minutes.
  5. Warm corn tortillas in a separate skillet until pliable.
  6. Spoon beef mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  7. Pour enchilada sauce over the rolled tortillas and sprinkle with cheese.
  8. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes or until bubbly.
