- 4 cups fresh spinach leaves
- 2 cups rotini pasta (cooked)
- 1 cup crumbled feta cheese
- 1 cup dried cranberries
- 1/4 cup extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Cook the rotini in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- In a large mixing bowl, combine cooled pasta, spinach, feta, and cranberries. Drizzle with dressing and toss gently.
- Chill for at least 30 minutes before serving to enhance flavors.
