Description

This colorful spinach pasta salad combines fresh spinach, tangy feta, and sweet cranberries for a refreshing dish that’s perfect for gatherings or picnics.


Ingredients

  • 4 cups fresh spinach leaves
  • 2 cups rotini pasta (cooked)
  • 1 cup crumbled feta cheese
  • 1 cup dried cranberries
  • 1/4 cup extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the rotini in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. In a large mixing bowl, combine cooled pasta, spinach, feta, and cranberries. Drizzle with dressing and toss gently.
