- 8 sheets phyllo dough
- 1 lb large shrimp, deveined
- 2 ripe avocados
- 2 cloves garlic, minced
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp chili powder
- ¼ cup cilantro, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté garlic until fragrant, then add shrimp seasoned with chili powder, salt, and pepper. Cook until shrimp are pink and opaque.
- In a bowl, mash avocados with lime juice and cilantro. Once shrimp cools, mix into the avocado mixture.
- Layer 4-5 sheets of phyllo dough, cut into squares, and press gently into greased muffin tins.
- Bake phyllo cups for 10-12 minutes until golden brown.
- Fill each cup with the shrimp-avocado mixture and serve warm.
