Ingredients

Scale
  • 2 lbs beef chuck roast
  • 2 medium sweet onions, chopped
  • 3 medium carrots, chopped
  • 1 lb baby potatoes, halved
  • 4 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme (or 1 tsp dried thyme)

Instructions

  1. Sear the beef in a skillet over medium-high heat until golden brown on all sides. Season generously with salt and pepper.
  2. In the same skillet, sauté chopped onions and minced garlic until translucent (about 5 minutes).
  3. Transfer seared beef to a slow cooker; add sautéed onions, carrots, potatoes, thyme, and enough beef broth to cover halfway.
  4. Cook on low for 8 hours or high for 4 hours.
  5. After cooking, shred the beef and thicken gravy by whisking cornstarch mixed with water into the broth until bubbly.
  6. Serve hot with gravy drizzled over the dish.
