  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp soy sauce
  • 1 tsp dried thyme
  • 1 cup sharp cheddar cheese, shredded (divided)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine cooked rice with half of the cheese.
  2. Sauté onion and garlic in a skillet over medium heat until translucent (about 5 minutes).
  3. Add ground turkey and cook until browned (7-10 minutes). Stir in chopped mushrooms and cook until softened (about 5 minutes).
  4. Pour in chicken broth and soy sauce; add thyme and simmer for 5 minutes.
  5. Mix turkey gravy into the cheesy rice base and transfer to a greased baking dish. Top with remaining cheese.
  6. Bake uncovered for 25-30 minutes or until bubbly and golden brown.
