  • 2 cups fresh broccoli florets
  • 1 cup jasmine or basmati rice
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tsp sesame oil
  • 1 tsp cornstarch
  • 1 tbsp fresh ginger, grated
  • 2 green onions, chopped
  • For the Sauce: 2 tbsp ketchup
  • 1/4 cup water

Instructions

  1. Marinate the beef: Combine soy sauce, brown sugar, garlic, ginger, sesame oil, and cornstarch in a bowl. Add sliced beef and marinate for at least 30 minutes.
  2. Cook the rice: Rinse rice until water runs clear; cook according to package instructions.
  3. Stir-fry: Heat oil in a skillet over medium-high heat. Sear marinated beef until browned (about 3-4 minutes). Add broccoli and any remaining marinade; stir-fry until broccoli is tender (about 5 minutes).
  4. Assemble: Serve the stir-fried beef and broccoli over rice. Garnish with chopped green onions.
