  • 1 lb lean ground turkey
  • 4 medium zucchinis, sliced
  • 1 large sweet onion, diced
  • 3 cloves garlic, minced
  • 2 cups shredded mozzarella cheese
  • 1 cup tomato sauce
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent, then add garlic and cook for an additional minute.
  3. Add ground turkey, breaking it apart with a spoon. Cook until browned (about 5–7 minutes).
  4. Stir in tomato sauce and Italian seasoning; let simmer for 5 minutes.
  5. In a greased baking dish, layer half of the zucchini slices at the bottom. Top with half of the turkey mixture and sprinkle with cheese.
  6. Repeat layering with remaining zucchini, turkey mixture, and top with remaining cheese.
  7. Bake uncovered for 30–35 minutes until bubbly and golden brown.
