  • 6 garlic cloves, minced
  • 1 cup low-sodium soy sauce
  • 1/2 cup white vinegar (or apple cider vinegar)
  • 3 bay leaves
  • 1 tbsp brown sugar
  • 1 tsp black peppercorns

Instructions

  1. 1. Marinate the chicken: In a large bowl, mix soy sauce, vinegar, minced garlic, and black peppercorns. Add chicken thighs and marinate for at least 1 hour (overnight is best).
  2. 2. Sauté the aromatics: Heat oil in a large skillet over medium heat. Add leftover garlic from the marinade and sauté until fragrant.
  3. 3. Brown the chicken: Add marinated chicken thighs skin-side down to the skillet and cook until browned on both sides (about 5 minutes per side).
  4. 4. Simmer: Pour in reserved marinade, bay leaves, and brown sugar. Bring to a simmer, cover, and cook on low heat for about 45 minutes until tender.
  5. 5. Final touches: Remove the lid and simmer uncovered for another 10 minutes to thicken the sauce. Adjust seasoning as needed.
