  • 1 lb flank steak
  • 2 ears corn on the cob
  • 8 small corn tortillas
  • 2 tsp chili powder
  • 1/4 cup fresh lime juice
  • 1/2 cup crumbled Cotija cheese
  • 1/4 cup mayonnaise (or Greek yogurt)
  • 1 tsp chili lime seasoning

Instructions

  1. Marinate the steak by whisking together lime juice, chili powder, salt, and pepper in a bowl. Place the flank steak in a resealable bag with the marinade and refrigerate for at least 1 hour.
  2. Prep the corn by husking it and soaking it in water for about 10 minutes.
  3. Preheat your grill to medium-high heat (400°F). Grill the soaked corn while placing the marinated steak directly over high heat.
  4. Grill the flank steak for about 6 minutes per side until desired doneness is reached. Rotate the corn until charred all around.
  5. Allow the steak to rest for 5 minutes before slicing against the grain. Cut kernels off the cooled corn.
  6. Warm tortillas on the grill or stovetop, then assemble tacos with sliced steak, grilled corn kernels, Cotija cheese, and drizzle with creamy chili-lime sauce.
