Ingredients

  • 1 cup cooked salmon, flaked
  • 1 cup panko breadcrumbs
  • 1 large egg
  • 2 green onions, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Oil for frying (about 1/4 cup)

Instructions

  1. In a large mixing bowl, combine the flaked salmon, panko breadcrumbs, egg, green onions, parsley, salt, and pepper. Mix until well combined.
  2. With clean hands, form the mixture into small patties about 2 inches wide.
  3. Heat oil in a large skillet over medium heat until shimmering.
  4. Fry the patties in batches, cooking each side for 3–4 minutes or until golden brown.
  5. Transfer to paper towels to drain excess oil and serve warm with tartar sauce or lemon juice.
