  • 2 lbs Idaho potatoes, medium-sized
  • 1 head fresh garlic (approximately 10 cloves)
  • 4 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 tsp dried rosemary (or thyme)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the Idaho potatoes thoroughly. Cut them into even-sized wedges.
  3. Peel the garlic cloves and toss them with potato wedges in a large bowl, along with olive oil, salt, pepper, and dried herbs.
  4. Mix until each wedge is fully coated in oil and seasonings.
  5. Spread the seasoned wedges on a parchment-lined baking sheet in a single layer.
