Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the Idaho potatoes thoroughly. Cut them into even-sized wedges.
- Peel the garlic cloves and toss them with potato wedges in a large bowl, along with olive oil, salt, pepper, and dried herbs.
- Mix until each wedge is fully coated in oil and seasonings.
- Spread the seasoned wedges on a parchment-lined baking sheet in a single layer.
- Roast for 30-35 minutes or until golden brown and crisp.
- Allow to cool for about five minutes before serving.
