  • 8 oz fusilli or penne pasta
  • 1 can (5 oz) good-quality tuna packed in olive oil
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, thinly sliced
  • 1/2 small red onion, finely diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente (about 8-10 minutes). Drain without rinsing.
  2. In a mixing bowl, break apart the drained tuna with a fork. Add halved cherry tomatoes, sliced cucumber, diced red onion, and cooked pasta.
  3. Gently fold in chopped basil and parsley. Squeeze lemon juice and drizzle olive oil over the mixture. Season with salt and pepper to taste.
  4. Toss everything together until well combined. Serve immediately or refrigerate for at least 30 minutes to enhance flavors.
