- 8 oz fusilli or penne pasta
- 1 can (5 oz) good-quality tuna packed in olive oil
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, thinly sliced
- 1/2 small red onion, finely diced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon (about 2 tbsp)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente (about 8-10 minutes). Drain without rinsing.
- In a mixing bowl, break apart the drained tuna with a fork. Add halved cherry tomatoes, sliced cucumber, diced red onion, and cooked pasta.
- Gently fold in chopped basil and parsley. Squeeze lemon juice and drizzle olive oil over the mixture. Season with salt and pepper to taste.
