- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cups romaine lettuce, chopped
- ½ cup Caesar dressing
- ½ cup freshly grated Parmesan cheese
- 4 whole wheat tortillas
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Grill or pan-sear over medium heat until cooked through (internal temperature reaches 165°F). Allow to rest before slicing.
- While the chicken cooks, wash and chop the romaine lettuce and halve the cherry tomatoes.
- On each tortilla, spread Caesar dressing in the center. Layer sliced chicken, romaine lettuce, halved tomatoes, and sprinkle with Parmesan cheese.
- Fold in the sides of the tortilla and roll tightly from bottom to top.
- Slice each wrap in half diagonally and serve immediately with extra dressing if desired.
