  • 2 cups fresh broccoli florets
  • 2 cups fresh cauliflower florets
  • 1/4 cup red onion, finely chopped
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup unsalted sunflower seeds
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tbsp apple cider vinegar
  • 1 tbsp sugar
  • Salt and pepper to taste

Instructions

  1. Wash and chop broccoli and cauliflower into bite-sized pieces.
  2. Finely chop the red onion.
  3. In a bowl, whisk together mayonnaise, Greek yogurt, apple cider vinegar, sugar, salt, and pepper until smooth.
  4. In a large mixing bowl, combine broccoli, cauliflower, red onion, cheddar cheese, and sunflower seeds. Pour the dressing over the top and gently toss until well coated.
  5. Cover the salad and chill in the refrigerator for at least one hour to allow flavors to meld.
  6. Serve chilled; garnish with extra sunflower seeds if desired.
