Description

Protein Blueberry Muffins are a delightful blend of fluffiness and nutrition, perfect for breakfast or a snack. Bursting with fresh blueberries, they make healthy eating enjoyable.


Ingredients

  • 1 cup rolled oats
  • 1 scoop (30g) vanilla protein powder
  • 1 cup fresh blueberries
  • 2 tsp baking powder
  • 1/4 cup maple syrup
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 1/4 cup melted coconut oil
  • 1/2 cup unsweetened almond milk
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix rolled oats, protein powder, baking powder, and salt until well combined.
  3. Add melted coconut oil, Greek yogurt, maple syrup, eggs, and almond milk to the dry ingredients; stir until just combined.
  4. Gently fold in fresh blueberries.
  5. Fill each muffin cup about three-quarters full with the batter.
  6. Bake for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  7. Allow to cool slightly before transferring to a wire rack.
