- 1 whole chicken (4–5 pounds)
- 2 tbsp olive oil
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 4 garlic cloves, smashed
- 1 whole lemon, halved
- 1 tsp salt
- 1 tsp pepper
- 1 cup low-sodium chicken broth
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp dried oregano
Instructions
- Preheat your oven to 425°F (220°C). Rinse the chicken under cold water and pat dry with paper towels.
- In a bowl, mix olive oil, garlic, juice from one lemon half, paprika, salt, pepper, oregano, rosemary, and thyme.
- Rub the marinade generously over the chicken and inside the cavity. Squeeze the remaining lemon half inside.
- Place sliced onions around the chicken in a roasting pan and pour in the chicken broth.
- Roast for about 1 hour and 15 minutes or until juices run clear when pierced near the bone.
- Let rest for 10-15 minutes before carving.
