Description

Ingredients

  • 1 whole chicken (45 pounds)
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 4 garlic cloves, smashed
  • 1 whole lemon, halved
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup low-sodium chicken broth
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 425°F (220°C). Rinse the chicken under cold water and pat dry with paper towels.
  2. In a bowl, mix olive oil, garlic, juice from one lemon half, paprika, salt, pepper, oregano, rosemary, and thyme.
  3. Rub the marinade generously over the chicken and inside the cavity. Squeeze the remaining lemon half inside.
  4. Place sliced onions around the chicken in a roasting pan and pour in the chicken broth.
  5. Roast for about 1 hour and 15 minutes or until juices run clear when pierced near the bone.
  6. Let rest for 10-15 minutes before carving.
