  • 2 cups rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1 cup bell peppers (assorted colors), diced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water to cool.
  2. While the pasta cools, chop cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined.
  4. In a large mixing bowl, combine cooled pasta with chopped vegetables. Drizzle the dressing over the mixture and toss gently until everything is well coated.
  5. Cover and chill in the fridge for at least 30 minutes before serving to allow flavors to meld.
