  • 3 medium zucchinis (sliced lengthwise into 1/8-inch strips)
  • 15 oz whole milk ricotta cheese
  • 2 large eggs
  • 2 cups marinara sauce (no added sugars)
  • 2 cups shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh basil leaves (for garnish)
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. Slice zucchinis thinly using a mandoline or sharp knife.
  3. In a bowl, mix ricotta cheese, eggs, salt, and pepper until smooth.
  4. Layer the baking dish starting with marinara sauce, followed by zucchini strips, ricotta mixture, more sauce, and shredded mozzarella. Repeat until all ingredients are used.
  5. Top with remaining mozzarella and Parmesan cheese. Add fresh basil leaves.
  6. Bake for 35-40 minutes until golden brown and bubbly.
