- 15 oz whole milk ricotta cheese
- 2 large eggs
- 2 cups marinara sauce (no added sugars)
- 2 cups shredded mozzarella cheese
- 1 cup freshly grated Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- Fresh basil leaves (for garnish)
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
- Slice zucchinis thinly using a mandoline or sharp knife.
- In a bowl, mix ricotta cheese, eggs, salt, and pepper until smooth.
- Layer the baking dish starting with marinara sauce, followed by zucchini strips, ricotta mixture, more sauce, and shredded mozzarella. Repeat until all ingredients are used.
- Top with remaining mozzarella and Parmesan cheese. Add fresh basil leaves.
