  • 8 oz spaghetti or fettuccine
  • 2 medium zucchinis, thinly sliced
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Cook pasta according to package instructions until al dente (about 8-10 minutes).
  2. In a large skillet over medium heat, melt the butter. Add sliced zucchini and sauté for about 5 minutes until tender.
  3. Add minced garlic to the skillet and sauté for an additional minute until fragrant.
  4. Reserve ½ cup of pasta water. Drain pasta and add it to the skillet with zucchini and garlic. Mix well, adding reserved pasta water gradually to achieve desired creaminess.
  5. Stir in grated Parmesan cheese until melted and creamy.
  6. Remove from heat and fold in chopped basil. Serve immediately with additional Parmesan if desired.
