- 1 whole chicken (4–5 pounds)
- 2 oranges, juiced and sliced
- 1 lemon, juiced and sliced
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, whisk together the orange juice, lemon juice, olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Pat the chicken dry with paper towels. Rub half of the marinade all over the chicken and inside its cavity.
- Stuff the remaining orange and lemon slices inside the chicken along with additional herb sprigs for flavor.
- Place the chicken breast-side up in a roasting pan and pour the remaining marinade over it. Roast for about 1 hour or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
- Baste halfway through cooking with pan juices for added moisture and flavor.
