Ingredients

  • 1 whole chicken (45 pounds)
  • 2 oranges, juiced and sliced
  • 1 lemon, juiced and sliced
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, whisk together the orange juice, lemon juice, olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  3. Pat the chicken dry with paper towels. Rub half of the marinade all over the chicken and inside its cavity.
  4. Stuff the remaining orange and lemon slices inside the chicken along with additional herb sprigs for flavor.
  5. Place the chicken breast-side up in a roasting pan and pour the remaining marinade over it. Roast for about 1 hour or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
  6. Baste halfway through cooking with pan juices for added moisture and flavor.
