  • 1 lb boneless skinless chicken thighs
  • 2 stalks fresh lemongrass, finely chopped
  • 4 cloves garlic, minced
  • 2 tbsp brown sugar
  • 3 tbsp low-sodium soy sauce
  • 3 tbsp lime juice (freshly squeezed)
  • 1/2 tsp black pepper

Instructions

  1. In a mixing bowl, combine lemongrass, garlic, brown sugar, soy sauce, lime juice, and black pepper to create the marinade.
  2. Place chicken thighs in a resealable bag or bowl and pour the marinade over them. Ensure they are well-coated. Seal and refrigerate for at least 30 minutes.
  3. Preheat your grill or oven broiler to medium-high heat.
  4. Remove chicken from the marinade (reserve marinade) and grill or broil for about 6-7 minutes per side until cooked through.
  5. Brush reserved marinade over chicken during the last few minutes of cooking for extra flavor.
  6. Let the chicken rest for 5 minutes before slicing. Serve with jasmine rice or vermicelli noodles drizzled with remaining marinade.
