  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup almond milk (or any plant-based milk)
  • 1 can coconut cream (chilled overnight)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a large bowl, sift together the flour, cocoa powder, sugar, baking soda, and a pinch of salt.
  3. In another bowl, whisk together the vegetable oil, vanilla extract, and almond milk until smooth. Gradually combine with dry ingredients until just mixed.
  4. Divide the batter between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  5. While cooling, whip the chilled coconut cream with powdered sugar until fluffy.
  6. Once cooled completely, layer the cakes with frosting in between and cover the top and sides liberally.
