  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 vanilla beans (seeds)
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, beat together softened butter and granulated sugar until fluffy. Add eggs one at a time, fully incorporating each before the next. Fold in flour until just combined.
  3. In another bowl, mix cream cheese until smooth. Add sour cream, granulated sugar, and vanilla bean seeds; blend until glossy.
  4. Spoon about one tablespoon of batter into each liner, followed by one tablespoon of cheesecake filling, then cover with another tablespoon of batter.
  5. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean. Cool completely.
  6. Once cooled, sprinkle brown sugar on top and use a kitchen torch to caramelize until golden.
