Description

  • 4 medium russet potatoes (about 2 lbs)
  • 8 oz cream cheese (softened)
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • ½ cup bacon bits (pre-cooked or freshly cooked)
  • ¼ cup chopped green onions
  • 4 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the russet potatoes. Prick with a fork and bake directly on the rack for about 45 minutes, until tender.
  3. Once cooled, slice each potato in half lengthwise and scoop out the insides into a bowl, leaving enough potato in the skin for support.
  4. Mix the scooped potato with cream cheese, sour cream, butter, salt, pepper, bacon bits, and half of the cheddar cheese.
  5. Spoon the mixture back into each potato skin. Top with remaining cheddar cheese and sprinkle with green onions.
  6. Place stuffed potatoes in a baking dish and bake for an additional 20 minutes until heated through and cheese is bubbly.
