- 8 oz cream cheese (softened)
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- ½ cup bacon bits (pre-cooked or freshly cooked)

- 4 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the russet potatoes. Prick with a fork and bake directly on the rack for about 45 minutes, until tender.
- Once cooled, slice each potato in half lengthwise and scoop out the insides into a bowl, leaving enough potato in the skin for support.
- Mix the scooped potato with cream cheese, sour cream, butter, salt, pepper, bacon bits, and half of the cheddar cheese.
- Spoon the mixture back into each potato skin. Top with remaining cheddar cheese and sprinkle with green onions.
- Place stuffed potatoes in a baking dish and bake for an additional 20 minutes until heated through and cheese is bubbly.
