  • 4 large ripe tomatoes
  • 1 (5 oz) can of high-quality tuna in olive oil or water, drained
  • 3 tbsp mayonnaise (or Greek yogurt)
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup diced red onion
  • 2 tbsp fresh chopped parsley or basil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper.
  2. Slice the tops off the tomatoes and scoop out the insides, reserving them for another use.
  3. In a bowl, mix together the drained tuna, mayonnaise, cheese, onions, herbs, salt, and pepper until well combined.
  4. Generously stuff each hollowed tomato with the tuna mixture.
  5. Place in the prepared baking dish and bake for 25-30 minutes until heated through and cheese is bubbly.
