- 1 tsp Dijon mustard

Instructions
- Cook the cheese tortellini according to package instructions until al dente. Drain and rinse under cold water.
- While the tortellini cools, chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
- In a bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined.
