  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced (mixed colors)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions until al dente. Drain and rinse under cold water.
  2. While the tortellini cools, chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined.
  4. In a large mixing bowl, combine cooled tortellini with chopped veggies. Pour the dressing over everything and toss gently until evenly coated.
  5. Cover and chill in the refrigerator for at least one hour before serving.
