- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, finely chopped
- 1 cup bell peppers (mixed red and green), chopped
- 1 cup shredded sharp cheddar cheese
- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish with nonstick spray.
- In a large skillet over medium heat, heat olive oil. Sauté onions for about 3-4 minutes until translucent. Add bell peppers and cook until soft.
- Stir in the drained beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
- Transfer the mixture to the greased baking dish. Top with shredded cheddar cheese.
- Bake for 25-30 minutes or until bubbly and golden brown on top.
- Allow to cool for a few minutes before serving.
