  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup bell peppers, thinly sliced
  • 1 cup cucumbers, diced
  • ½ cup fresh cilantro, chopped
  • ¼ cup smooth peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • ½ tsp chili flakes (optional)

Instructions

  1. Heat oil in a skillet over medium heat. Season chicken breasts with salt and pepper and cook until golden brown and fully cooked through (about 6-7 minutes per side). Let cool.
  2. In a bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, and chili flakes until smooth.
  3. Chop bell peppers and cucumbers into bite-sized pieces.
  4. Slice the cooled chicken and combine with veggies and cilantro in a large bowl. Pour the dressing over and toss gently to coat.
  5. Serve garnished with additional cilantro or crushed peanuts for added crunch.
