  • 1 cup fresh bell peppers (sliced, mixed colors)
  • 1 cup broccoli florets (fresh)
  • 1 cup carrots (thinly sliced)
  • 3 cloves garlic (minced)
  • 1 inch fresh ginger (peeled and minced)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp cornstarch
  • 1 tsp sesame oil

Instructions

  1. Prepare your ingredients by washing and chopping vegetables into bite-sized pieces.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes until golden brown and cooked through.
  3. Add bell peppers, broccoli, and carrots to the skillet. Stir-fry for about 4-5 minutes until tender-crisp.
  4. In a small bowl, whisk together soy sauce, honey, garlic, ginger, and cornstarch until smooth. Pour over the chicken and vegetables.
