  • 4 large flour tortillas
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp Mexican seasoning blend
  • ½ cup sour cream (for serving)
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Season chicken breasts with the Mexican seasoning blend. Heat olive oil in a skillet over medium heat. Cook chicken for 6-8 minutes per side until cooked through. Remove from heat and let rest.
  2. Shred or chop the cooked chicken into bite-sized pieces.
  3. Place one tortilla in the skillet and layer half with cheddar and Monterey Jack cheese. Top with shredded chicken and sprinkle more cheese on top.
  4. Fold the tortilla in half and cook until golden brown and crispy, about 3-4 minutes per side.
  5. Remove from skillet, let cool slightly, slice into wedges, and serve with sour cream.
